Melt-In-Your-Mouth Chocolate Cookies Recipe, Inspired by ROYCE’ Chocolate

Drawing inspiration from Nama Chocolate "Au Lait", this delectable chocolate cookie looks unassuming, but tastes like no cookie you’ve had before. This cookie has all of our favorite qualities of Nama Chocolate "Au Lait": a rich chocolate flavor, a hint of bitter cocoa, and a soft, creamy texture that melts in your mouth. Here’s how to make it at home:


Ingredients:

  • 1 ½ cups all-purpose flour
  • ¾ cup fine quality cocoa powder
  • 2 tsp baking powder
  • 1 package cream cheese, softened
  • ½ cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 tbsp vanilla extract
  • ½ tsp fine-grain sea salt
  • ¾ cup high quality semi-sweet chocolate chips, melted
  • 2 large eggs
  • Reserved cocoa powder for dusting (about ½ cup)

Directions:

  • In a medium bowl, whisk flour, cocoa powder, and baking powder until well combined. Set aside.
  • In a separate bowl (or a stand mixer’s bowl), mix the cream cheese and butter together until blended, creamy, and smooth.
  • Beat in sugar, vanilla, and salt until well combined and fluffy. Then beat in melted chocolate chips until well combined. Finally beat in the eggs, until the mixture is creamy and light (about 2 minutes on medium speed for an electric mixer).
  • Slowly beat in the combined dry ingredients until thoroughly incorporated and it forms a sticky dough. Cover the bowl and refrigerate for several hours or overnight.
  • After the dough has cooled enough to be pliable in your hands without being overly sticky, preheat the oven to 325 degrees and prepare a baking sheet with parchment paper and prepare a bowl of reserved cocoa powder.
  • Divide and roll dough into one inch balls, then roll the balls of dough in the cocoa powder to achieve a light coating.
  • Evenly space the dough on the baking sheet, about 2 inches apart. Bake about 14 minutes, or until cookies appear puffed and crackly. The cookies should still be soft in the center.
  • After allowing them to fully cool, enjoy the soft, decadent texture and cocoa flavor that you love in Nama Chocolate "Au Lait"!
